Jambalaya and the last hanger on-ers

Breakfast was pancakes again!


This morning I took our 1yo to see the last remaining sheep still yet to lamb! There only looked to be 20 left (out of over 400!) so I don’t think there will be any still waiting when our new au pair arrives next week but there will still at least be lambs in the field!


Lunch was a tortilla with a little mayonnaise, a piece of ham and some salad! When I was pregnant with our 3yo I loved raw red onion and would eat a whole onion each day – I couldn’t do that now but still enjoy it! Photo taken before rolling it up:


Supper tonight was sausage and prawn jambalaya! To make:

Cook sausages and set aside. Add one (chopped) onion to the pan and saute for 3-5 minutes. Add 2 (although we added 4!) cloves of crushed garlic, paprika and chilli powder to taste and some chopped peppers. Cook for 3 more minutes. Add 90g of rice per person and stir well to coat. Add can of chopped tomatoes with herbs and enough stock to cover the rice, stir well. Cover and cook for 20 minutes, adding more stock as required. Slice the sausages and add back to the pan along with king prawns. (We also added in frozen peas and sweetcorn here too) Cook for another 5 min (longer if adding frozen veg to allow the temperature to come back up) and serve! Sadly our 4yo seems to have gone off rice but everyone else enjoyed it! There was plenty left for my husband for lunch tomorrow too so he’s happy!
