Homemade duck burgers

We love eggy bread and our 4yo asked for it for breakfast this morning! To make, soak bread in beaten egg:

Turn and soak the other side:

Cook on a medium heat, turning when golden underneath:

Eat while still hot!

This morning we went to church. When we got home it was lunchtime which, today, was a pasta salad:

Supper tonight was homemade duck burgers.  First 2 duck breasts were blitzed in a blender and then mixed with breadcrumbs,  beaten egg and rosemary/seasoning:

The resulting burgers were left to rest in the fridge for one hour before cooking at 180ºC for 30 minutes and served with homemade potato wedges!
