Chocolate baobab cakes and spinach, pinenut and 4 cheese lasagne

Playgroup started up today, something our 2yo was excited about as it meant she finally got to take her nicnic with her she’s missed it over the holidays! I give her a chocolate cake in her picnic (nicnic!) as she loves them but, unknown to her, it’s got lots of ground almonds in and baobab powder in! The almonds provide essential fatty acids and the baobab powder gives her vitamin C and potassium! We’d run out so I needed to make some more this morning:

Breakfast was boiled eggs:

Today was the funeral of Baroness Margaret Thatcher. It was broadcast on tv so our 1yo and I found lots of jobs to do in the kitchen so I could watch it..

Lunch was a Brie and redcurrant jelly sandwich

We had a friend and her daughter over for supper this evening so I made a spinach, pinenut and 4 cheese lasagne. It’s a Delia recipe and is lovely – the prep fpr it is quite longwinded but it’s absolutely worth the effort!

Ready to go in the fridge before cooking:

Cooked!

My friend had made an amazing lemon drizzle cake which we had for pudding:

Our 2yo decided she didn’t just want icecream with hers – if you leave the salad bowl in reach then a splash of colour is easy to add..

Needless to say, she didn’t eat any of it!!
