Some days I really fancy a more substantial breakfast, today was one of those day! We had a Spanish au pair last year and she was entirely bemused by the concept of a Full English Breakfast but teasing in return that the Spanish drink hot chocolate and eat doughnuts (churros) was fair reply!
The sausage is low fat and was grilled, along with the mushrooms and tomatoes. The eggs were poached too making this much healthier than its traditional counterpart!
This is where the healthiness ended though – a trip to the cinema to see Finding Nemo in 3D (which was utterly brilliant to see in 3D rather than normal!) proffered this for lunch..
It wasn’t intended to be for lunch but we didn’t want anything to eat after all that funnily enough!
Supper tonight was lovely – aubergine, courgettes, peppers, garlic (lots!) and feta cheese all on a ciabatta which had been lightly toasted and spread with a sundried tomato sauce. Very quick, very simple and very very nice!
After supper we made a 5 cup loaf as I had 3 very very ripe bananas to use up:
1 cup of self raising flour
1 cup of oats
1 cup of milk
1 cup of mashed bananas
1/2 cup of sugar
Mix together, cook at 170ºC for 45 min until a skewer comes out cleanish – cover with foil if not cooked after 45 min to prevent the top burning. Don’t panic if it sinks while putting foil on, it sinks as it cools anyway!
Best served still warm with butter!
